Continuous load is the real test
In commercial kitchens the preparation volumes are higher, the devices run longer at a stretch, and cleaning is organised. What matters is service life under continuous load — and how quickly a device is running again after a failure.
The power supplies set the framework here: NG3, NG4 and NG5 cover 60 to 120 kg of daily capacity with the DEVRAN. A device that regularly reaches its limit ages faster — designing for the busiest day is therefore not a recommendation in commercial kitchens but a prerequisite. Where there are several serving stations, each station works with its own device.
- Requirement for the cut
- High daily volumes with a constant cutting pattern — across shifts and changes of staff.
- Workflow
- Separate preparation and serving processes, fixed cleaning windows, defined responsibilities.
- Configuration
- Power supply at the upper end of demand, one device per station, wearing parts in stock.
- Failure scenario
- Circular blades, couplings and gear rings on site — service must not depend on a wearing part.
