One cutting principle, many operations
The cut on the vertical spit is the same everywhere — the conditions are not. Volume, pace, meat type and workflow differ from business to business, and with them the right configuration of device, power supply and circular blade.
What matters for the choice of power supply is the busiest day of the week, not the average. The circular blade is chosen according to meat type and the desired cutting pattern.
