What is DEVRAN?

DEVRAN is a hand-guided electric Döner knife for cutting on the vertical spit. The current model is called Devran1 TypA; the Master version is supplied with the NG4 power supply.

An electric Döner knife is a hand-guided tool — not a machine. It supports the hand that guides the cut and therefore has to be light, durable and predictable.

Why DEVRAN?

A Döner knife is applied several hundred times in a single shift — to a spit that keeps changing in temperature, density and diameter. Three factors decide whether the result stays constant: the speed under load, the weight in the hand and the availability of the parts that wear out. DEVRAN is engineered for all three.

Cutting technology

The motor comes from Maxon in Switzerland. In the version with the NG4 power supply — the Master version — a servo system measures the load and adjusts: the speed stays in the working range of 5,000–6,000 rpm instead of dropping when the blade is applied — regardless of whether the cut is made at the top or the bottom of the spit. The result is repeatability: the same cutting pattern across the entire shift, for minced-meat Döner as much as for chicken, Yaprak Döner or shawarma. The servo system supports an even cut quality, reduces fat loss and retains the meat juices.

Ergonomics

The power electronics sit in the power supply, not in the handpiece — which is why the motor unit weighs around 1,000 g. At the device, guided in a damp and greasy environment, 28 V are present: the interface to the operator stays in the low-voltage range. Anyone who wants to feel the difference compares the last spit of the day with the first.

Operation

DEVRAN is applied to the running spit and guided across the surface; the rotating circular blade does the cutting work, the hand only guides. The slice thickness can be adjusted variably on the device — for thin as well as heartier slices. The basic principle is deliberately kept simple — simple operation is part of the product philosophy. Cleaning

Material and construction are designed for everyday catering use: resistant to grease, heat and daily cleaning, dismantled without tools wherever possible. Daily cleaning is as much part of operations as the cut itself — how it is organised is described in the Cleaning section.

Maintenance

Wearing parts — circular blades, couplings, gear rings — can be replaced individually. The device is built to be repaired; repairs are handled by the in-house workshop of CEYLAN GmbH, warranty work is prioritised. More on this in the Maintenance section.

Frequently asked questions about DEVRAN

Which power supplies fit the DEVRAN?

DEVRAN works with the power supplies NG3, NG4 and NG5. They differ in continuous output and determine the daily capacity: NG5 60 kg, NG3 90 kg, NG4 120 kg. The Master version is supplied with the NG4 power supply; the servo system for constant speed under load is available in combination with the NG4.

Which circular blades does DEVRAN use?

Standard circular blades with Ø 80 mm — smooth, serrated, notched or in special shapes. The choice of blade geometry depends on the meat type and the desired cutting pattern. Re-sharpenable versions extend the service life.

Can the slice thickness be adjusted?

Yes. The slice thickness is variably adjustable on the device — from thin to heartier slices. The adjustment steps for each model are described in the operating instructions supplied.

How heavy is the device?

The motor unit weighs around 1,000 g. This is possible because the power electronics sit in the power supply and are not carried in the handpiece.

What voltage does the device work with?

230 V on the mains side; 28 V are present at the handheld device. The conversion takes place in the power supply — at the device, guided in a damp and greasy environment, the interface to the operator stays in the low-voltage range.

How often does the circular blade need to be changed?

The circular blade is a wearing part — its service life depends on daily volume and meat type. Re-sharpenable versions can be reconditioned with sharpening and grinding tools; how the change works is described in the Blade change section.

Are spare parts also available for older DEVRAN devices?

Yes. CEYLAN GmbH permanently stocks wearing and spare parts — circular blades, couplings, gear rings — including for device generations that are no longer manufactured. Delivery time in Germany approx. 2 working days, in Europe approx. 3–4.

Is DEVRAN tested for commercial use?

The devices are CE / GS & CE tested and intended exclusively for commercial use.
