DEVRAN® is the Döner knife brand of CEYLAN GmbH. Since 2000 it has stood for a clear product philosophy: robustness, simple operation, high performance, long service life — and the use of a standard blade that remains permanently available as a wearing part.

An electric Döner knife is applied several hundred times in a single shift — to a spit that keeps changing in temperature, density and diameter. DEVRAN is built for exactly this work.

02 — Cutting technology

What determines the cut across a shift

The measure of a Döner knife is not the data sheet but the plate: even slices, reliable portions, a device that cuts at the end of the shift the way it did at noon. Five factors decide this.

  1. 01 Cut quality

    The servo system — in combination with the NG4 power supply — holds the speed under load instead of running it against the resistance; the cutting pattern stays even, from the top to the bottom of the spit.

  2. 02 Precision

    Maxon motor from Switzerland with a working range of 5,000–6,000 rpm — independent of meat type and density.

  3. 03 Ergonomics

    The power electronics sit in the power supply, not in the handpiece. The motor unit weighs around 1,000 g — cut quality does not decline with fatigue.

A Döner knife is not made from a single part. Only the interplay of the assemblies produces a tool that can withstand continuous operation — and can still be repaired years later.

Development and manufacturing are handled in-house at CEYLAN GmbH. Every assembly can be explained individually — and replaced individually.
