Operation

The device is applied to the running spit and guided across the surface — the rotating circular blade does the cutting work, the hand only guides.

The basic principle

DEVRAN is a hand-guided tool: the hand determines where and how the cut is made — the device ensures the blade stays predictable while doing so.

The device is applied to the running spit and guided across the surface; the rotating circular blade does the cutting work. The servo system — in the version with the NG4 power supply — holds the speed in the working range of 5,000–6,000 rpm, even when the blade meets denser meat, so the operator does not have to compensate for the resistance with pressure.

Simple operation has been part of the DEVRAN product philosophy since 2000: the device should be usable without lengthy training and behave consistently across changes of staff and shift. The operating instructions supplied are authoritative for operation and safety.

Safety

28 V are present at the handheld device — the interface to the operator stays in the low-voltage range in a damp and greasy working environment. The devices are CE / GS & CE tested and intended exclusively for commercial use.

What makes operation easier

Weight
The motor unit weighs around 1,000 g — manageable even at the end of the shift.
Servo system
With the NG4 power supply: constant speed instead of compensating by hand.
Slice thickness
Variably adjustable on the device — for thin as well as heartier slices.
Standard parts
Blade change and care always follow the same pattern.
