The spit is a moving target
A vertical spit changes over the course of the day: cooked on the outside, cooler inside, heavier at the top than at the bottom, the diameter decreasing with every round. A Döner knife is applied to this moving target several hundred times in a single shift.
Three factors decide whether the result stays constant: the speed under load, the weight in the hand and the availability of the parts that wear out. If the speed drops when the blade is applied, the cutting pattern changes. If the device is too heavy, cut quality declines with fatigue. If a circular blade or a coupling is missing, service stops.

Constant speed, constant cutting pattern
In the version with the NG4 power supply, the servo system measures the load and adjusts: the speed stays in the working range of 5,000–6,000 rpm, regardless of whether the cut is made at the top or the bottom of the spit. For the business this means repeatability — the same cut across the entire shift.
Meat types and cutting behaviour
Döner varieties such as minced-meat Döner, chicken, Yaprak Döner and shawarma differ in firmness, structure and thickness. The servo system (with the NG4 power supply) supports an even cut quality across these differences, reduces fat loss and retains the meat juices. Fine-tuning is handled by the choice of circular blade — smooth, serrated or notched, depending on the structure of the spit. The slice thickness itself can be adjusted variably on the device.
Why a hand-guided tool
An electric Döner knife is a tool, not a machine: the hand determines where and how the cut is made — the device ensures the blade stays predictable while doing so.
