Controlled power instead of fixed speed
A motor without control runs at a fixed speed. If the blade meets denser meat, that speed drops — the cutting pattern becomes uneven, the device pulls. The servo system in the DEVRAN — in combination with the NG4 power supply — measures the load and adjusts.
The motor comes from Maxon in Switzerland. The working range is 5,000–6,000 rpm and stays there — whether at the top or the bottom of the spit, whether chicken or minced meat. The gearbox transmits the power to the blade, the bearings guide it under continuous load.

Why 28 volts at the handheld device
On the mains side the devices work with 230 V. The conversion to 28 V takes place in the power supply, not in the handpiece. At the device, guided in a damp and greasy environment, low voltage is therefore present. At the same time the handpiece stays lighter because the power electronics are not carried along — the motor unit weighs around 1,000 g.
The power supply is part of the drive
The power supplies NG3, NG4 and NG5 differ in continuous output and determine the daily capacity of 60–120 kg. The servo system is tied to the NG4 power supply — the Master version of the DEVRAN. With DEVRAN, drive therefore always means: handheld device and power supply as a matched system. Details in the Power supplies section.
