The blade determines the result: geometry according to meat structure, tested fit to the mount and a standard blade that remains permanently available.

The blade determines the result

The circular blade is the part that makes the cut — and wears out in the process. Its geometry determines the cutting pattern, its fit the safety, its availability the economics of the device.

DEVRAN deliberately relies on a standard blade with Ø 80 mm: it remains permanently available as a wearing part instead of being tied to a special shape. This decision has been part of the brand's product philosophy since 2000.

Diameter, mount and cutting shape belong together. Where a circular blade fits devices from other manufacturers, it is explicitly marked as suitable for.

Geometry according to meat structure

Smooth circular blades cut cleanly with an even meat structure. Serrated versions grip better with firm or uneven structure. Notched versions reduce slices sticking to the blade. For particular meat types and cutting patterns there are special shapes.

Re-sharpening instead of buying new

Re-sharpenable versions extend the service life: with sharpening and grinding tools the blade can be reconditioned before it has to be replaced. When re-sharpening is worthwhile and when a change is due is shown in the Blade change section.

Fit is a safety matter

A circular blade sits on a defined mount and runs at 5,000–6,000 rpm. Diameter, mount and cutting shape are therefore not interchangeable individual values but a tested combination — what matters is always the fit to the device.
